Chocolate Malt Cupcakes and Babysitting

Last weekend I got to babysit for an adorable little girl named Emerson and we played dress up with the tiger mask and ears I have. She got the biggest kick out of it and looked so cute!

She’s the funnest little girl to babysit, we watch movies while she’s cuddled on the chair with my pillow and her blankets

and if you let her she’ll take over the dog’s kennel and not the dog in. Cali wasn’t too happy about that but I thought it was hilarous.

and then we made Chocolate Malt Cupcakes!

Yield: 30 cupcakes

For the cupcakes:

2 1/4 cups flour

3/4 cup unsweetened cocoa powder

1/2 cup sugar

3/4 cup packed brown sugar

1 1/2 teaspoons baking soda

1/2 teaspoon salt

1 cup whole milk

1 1/2 cups malted milk powder {original flavor}

1 cup vegetable oil

3 large eggs

1 cup sour cream

1 teaspoon vanilla extract

For the frosting:

1 cup unsalted butter, at room temperature

1 cup vegetable shortening, at room temperature

1/2 cup malted milk powder (original flavor)

4 tablespoons unsweetened cocoa powder

4 1/2 cups powdered sugar

Chocolate covered malt balls (Whoppers) for garnish. (optional)

To make the cupcakes:

Preheat the oven to 350˚F. Line standard cupcake pans with paper liners.

In a mixer bowl, whisk together the flour, cocoa, sugars, baking soda and salt. In a separate small bowl, whisk the milk and malted milk powder until all the powder is dissolved. Add the malted milk mixture and the oil to the flour mixture, blending on medium-high speed until incorporated. Add eggs one at a time, incorporating them as you go. Stir in the sour cream and vanilla until just combined.

Divide the batter evenly into the cupcake liners, filling 2/3 of the way. (To keep it from getting messy, use a freezer bag to pipe the batter into the tins. I can’t believe I ever scooped the batter into the cups with a spoon…this is so much easier!) Bake until the cupcakes pass the toothpick test (about 18-20 minutes.) Cool completely before frosting.

To prepare the frosting:

Whip the butter and shortening together in a large mixer bowl on high speed for several minutes until very light and fluffy. Stir in the malted milk powder and cocoa. Whip on medium-high speed for 1 minute. Slowly add the powdered sugar about 1/2 cup at a time. Mix until the frosting becomes thick and a stiffer consistency for piping.

Pipe large swirls of frosting on top of cupcakes and top with chocolate covered malt balls. Enjoy!

Things to do with your dog

cali-dogMy beloved dog Cali is a big part of my life, so I have decided to write a post for all dog lovers out there to provide you with ideas for fun, doggy-friendly activities. When you want to have a doggy day out, it always helps if the weather is nice. When the sun is smiling down on you and you have a free day, then head out to the park with your pooch to get some exercise. As I have previously posted, Cali loves car rides, so according to her the further you have to drive to get there, the better. Bring a ball or a frisbee and play that age-old game of fetch. It never seems to get boring for dogs, so you pretty much have a guaranteed winner.

As getting outside and running around is most dogs’ idea of heaven, this is your best bet if you are spending the day with them. Once you have finished checking e-mails or playing bingo on http://www.binguez.es head out, and make sure to bring your energy. If you want to get some proper exercise, then put on your running gear, tracksuit, trainers and all, and start jogging. Your dog will follow on with all the energy in the world and you will both get some valuable exercise.

Unfortunately, doggies still need walking whatever the weather, however this is one of the things I love about them. If it looks gloomy and cloudy outside or even, god forbid, it is raining, it is easy to dismiss a walk in the fresh air in favour of lounging around in front of the television under a cosy blanket.

Throwback Thursday

This picture is from last year, we had gone on a trail ride from our cabin in lakewood to the end of the trail in Laona. We stopped for a soda and a rest at the bar there before continuing on home. I can’t wait till the trails open in a few weeks! We already have our first big trail ride planned for memorial day weekend!

Weekend Updates

If you’ve been entering the giveaways then you know that I got my wisdom teeth pulled out on saturday and while I feel great and haven’t had to take much in the way of pain pills I still feel like my mouth is swollen. Needless to say I still can’t eat solid foods. I really hope that I can eat more than just pudding and jello and things I don’t have to chew by this weekend because we have a birthday party for my little cousin and then of course easter on sunday and I’d really like to be able to actually eat this weekend.

Fur Baby Friday

Yesterday I was cleaning out my car so I had my trunk open and Cali was outside with me. Well she decided that the best place to sit was apparently in my trunk.

Throwback Thursday

I saw this on Monica’s blog and I thought it would be perfect to show you some of the fun pictures that I have from when I was a kid.

This is when I was about 5 or 6 and we used to go mud running in the summers. Mom says that I just climbed onto the 3-wheeler and she took a pic but I’m guessing we were getting ready to go or had just gotten back from mud running

Yesterday Was a Good Day!!

I’ve talked about how much I wanted to go to Bloggy Boot Camp with the SITS Girls this coming October in Vegas and I knew there was always the possibility that I wouldn’t be able to go. Especially since I’m a college student and I don’t have a job (working on that part though). Well last night there was a bloggy boot camp twitter party and they were giving away 2 tickets to Bloggy Boot Camp and I WON ONE!! So now it’s official I’m going to Bloggy Boot Camp in Vegas in October!

Although the cost of the plane ticket is crazy! When I checked it last night it was at $500 which kinda sucks cause that doesn’t even include the baggage fees. But I am super excited to go and meet some awesome friends like Mrs. Monologues, Julie @ Dutch Being Me, My awesome roomie Jenna from Bloggy Blog Designz and so many others!
